Recipe: Caprese Salad

This Italian style salad is simple to prepare and perfect for sharing, for starters or for a side on a hot summer’s day.

This Italian style salad is simple to prepare and perfect for sharing, for starters or for a side on a hot summer’s day.

You'll need: 

  • 1kg assorted heirloom tomatoes, like ox heart, kumato, cherry pear yellow and cherry tomatoes
  • 1 bunch of fresh basil
  • 250g thick cows or buffalo yoghurt
  • 2 fior di latte or buffalo mozzarella
  • 200g baby bocconcini
  • Extra virgin olive oil
  • Sea salt

Serves 6.

Step 1. Spread the yoghurt on the base of a 40cm platter.
Step 2. Slice tomatoes in a variety of cuts, using the larger pieces as a base for the salad
Step 3. Tear the mozzarella into pieces
Step 4. Sprinkle with basil leaves
Step 5. Dress with extra virgin olive oil and sea salt
